Having spent some time looking for Ritchey, it seems like it might be a better idea to go with SPDs for touring, given that it'll be easier to find replacement parts at LBSs. Shops generally don't stock Ritchey but might stock SPD. That would mean having to find red SPD pedals for my road bike coz I don't want to buy another pair of shoes or change cleats each time I switch bikes.
Shimano SPD cleats are interchangeable with Ritchey pedals and vice versa. But Shimano pedals/cleats just seem to work better. Even the less expensive ones work better than other brands that use the same interface like Ritchey, Wellgo, etc.
Crank Bros also have recessed cleats and although I haven't tried their newly redesigned pedals, in the past, I tried the Eggbeaters and broke three pairs in two years. This was almost exclusively on the road.
